When you create a maintenance plan for databases in SQL2000, there is one tab that allows you to perform optimization jobs.

I believe this is just Re-Indexing of the selected databases, but wanted to confirm whether it is just Re-Indexing, or more is done.

Anyone know?

Basically, it does a REINDEX and SHRINKDATABASE. It can change the FILLFACTOR of the indexes as part of the REINDEX and it can return unused space to the OS as part of the shrink.
