What difficulties should I expect when converting over from traditional PBX to 100% Call Manager VIOP?

You really should do a bunch of reading. The biggest differenc in voice quality I've seen is how silence is handled. The best change is easier administration. I can now bring up a new site by simply sending them new phones. Your knowledge about TCP/IP, UDP, spanning tree, Windows 2000 server, firewalls and networking will be much greater. That is why you find networking guys doing VoIP stuff, becuase it's all data to us. My new 7970 phones can handle full motion video from a movie or a camera. Traditional PBX counldn't do that. This list goes on and on.

Do you know of any training/reference resources or online information for this?

Cisco has an e-learning site for its partners. I do not think the average person has access to it.
