Since iPads (with credit card readers) seem to be popping up in many restaurants; what are the PCI requirements surrounding iPad use vs traditional POS Terminals?

Since they don't really have a pad specific standard, you need to do everything possible that does comply with PCI. While this may sound vague, there are a lot of requirements can be applied. My suggestion is to use a point-to-point encryption (P2PE) swipe reader as this is the strongest method of protection on the pads and takes much of it out-of-scope. I know there is at least one P2PE sled for iPads, there may be more. I would have to ask someone else here for a part number but he is out of the office until after New Years.

Happy New Year all! Hope this helps.

I believe I read something about the reader having to be secured to the tablet which might rule out the square device.
