Weird Outlook headers

Most users on our LAN use Outlook 97. One uses Outlook 2000. All are on Windows 95. When any Outlook 97 user person-x sends a message to the sole Outlook 2000 user, person-y, and person-y forwards the message, the headers of the message person-y has forwarded look like:

From: person-y [person-x@company.com]
To: 'person-y's nickname in person-x's address book'

I hope this is comprehensible! Thanks for any advice.
