I have several old PC's (Pentium I - III) that i would like to setup to browse the web only. I'm not particular about which browser I use just looking to set up something simple with the limited hardware I have. My thought was to setup a minimal linux system, but not sure if this would work and how to make sure I have the minimal install.

That would depend on the parts in the PC and the distro of linux you choose.

A couple links for setting up Firefox in kiosk mode:

Not sure about the 'minimum' hardware requirements. It seems like you only really notice minimal hardware when you run several programs or play games. I would think my old P166 w/56MB RAM would do kiosk-only pretty well, since aside from the initial startup being slow, you wouldn't really notice the sluggishness of the system.

Well. I have a k6350, a P100 and two PII's at 300-400mhz
clustered, all using custom mosix kernels and vanilla firefox works great on all with windowmaker or via X.

This may be a solution for you. Check out dynebolic-
