You can not enter a subscriber name in the phone's profile, or if not allowed to leave it blank you can just enter one character. I don't think you can block the extension number from showing up internally though - I'll have to check.
If you are on an ISDN PRI or some other type of line that transmits out the station ID onto the PSTN you can also fake what shows up on caller-id by entering in a valid 10-digit number (such as your company's main answer point) for the subscriber-id number. We do this for Physicians who return calls to patients from their offices - the number that goes out is the generic clinic number and not the personal number of the physician.
