The watchdog setting basically checks for a timeout of a lost communications. The watchdog is probably not the culprit, it may in fact be caused by your switch or router. You may want to flush all your ARP tables on switches, routers, and do a reset router on the servers as well and let everything come up clean.
Are all of your users losing connection or just a handful? Are the users that drop off on a particular subnet?
Will need a bit more info, but you can go into monitor and server settings and increase the watchdog timeout if you prefer.
