I'm using the DTS wizard to set up a package to import a non-Delimited (it's Fixed Field) file. I select the positions to create the fields, but don't see any way to eliminate those fields that I do not want to include in my table.

Also, somewhere along the way, I saw an option to delete the table first, if it exits, before creating a new copy of it.

Any help will be appreciated!

Why not use bcp with a format file. It will be a lot simpler and faster.

For DTS just don't map the fields you want to to omit to any columns in the destination table.

Instead of deleting the table why not truncate it?
You can do this in an sql task beforeb the import (workflow on success).

If you go for bcp in an SP then just code the truncate before the bcp.

Cursors are useful if you don't know sql.
DTS can be used in a similar way.
