We are looking to set up the Windows VPN for a client who wants up to 7 people to VPN into the office Server.

Has anyone use the Window's VPN and how secure is the security feature?
How easy is it to set up?
 
What do you mean exactly??? You have to have an endpoint that can accept VPN connections first. That is step one. Then you worry about configuring clients that will connect and how they will connect.

Something like a router/firewall that will accept a PPTP connection and then you are essentially "on" the network where the router is and you can do an RDP session to a server or a workstation on that network.

Put some more flesh on the bone of your question.
