I have a Question which is :
Is it secure if I have 2 networks connected through a 2 PIXs (VPN)
Is it secure if I let those machines do browsing & FTP ...... connections not only dedicated to VPN .

For legal reasons, people should not ever say "it is secure...", however what you are proposing (both) can be done, has been done, and can provide a high degree of security *IF* it is implemented correctly. For instance, ESP is advisable over AH, just as 3DES is preferable to DES, or SHA is superior to MD5.
