Volume Shadow Copy Not Working "Normally"

We've had shadow copy running successfully on our Win2003 server for some time now. When I check the "Previous Versions" tab on my client, I can only see snapshots from 6pm last Friday and prior - I cannot see the snapshots created this morning (the server shows that the shadow copies were completed, and I even did a manual one at 10:20). Any ideas why I can't see the snapshots?

Are there any errors in the event logs? Does the server have sufficient free RAM?

No error messages that I can see (not a lot going on in the event log, to be honest). The system seems to be OK on RAM.
 
Hmmm bit stumped if you aren't getting errors and it's just not working, don't you just love windows.

Could try to run a chkdsk to check the disc / file system integrity (would expect there to be errors logged if it was that sort of issue though)

My apologies if the question seems a little simple but I like to eliminate the basics.

Are you looking at the previous versions tab for a file or for a folder? If you click properties of a file and look at previous versions from there you will only see previous versions of that file. If the file has not changed, then a new entry will not be created for that file.
