Look at DLI (Digital Loggers International). To record all calls you would have to record the analog trunks or the digital PRI trunks. I don't think you can record SIP trunks.
I use mine to record all calls to critical phones. If you are a large company you will have huge volumes of call data and even though it is date and time stamped you will have fun mining it if you have no clue what date/time you are looking for. I use their equipment for my individual phones and a couple of radio transceivers and am happy with it.

We use ASC telecom for our recorders. They are very flexible and a lot cheaper than NICE or Verint. We use ours to record OpenScape Xpert turrets, IP phones, and SIP radios. They can do trunk recording as well- we just don't do that ourselves.
