Voice interrupt on PArtner 7.0

If you voice interupt a busy station on the 7.0, will the third party hear the 2 beeps and the faint voice of the person interrupting or will the interupt be silent to the third party?

Yes, they can hear it faintly. Although, when or if the person you interupted responds, the outside caller cannot hear it. This has been my experience with it.
