Anyone have any good "best practice" guides for handling large-scale ESX deployments?

Pro's and Con's using either very large LUN's and using VMFS to carve out boot and data drives (~10 virtual servers per ESX server).
Or creating smaller LUN's for each virtual server?

Also, the best practices for the Clariion systems. One HBA down one SP for ESX Boot and another for data\boot for the VM's...etc. (Yes, we boot everything from the SAN. All of our blade servers are diskless…)

We have 7 ESX servers and are utilizing VMotion and have LUN's assigned down multiple paths on multiple servers and it's starting to get very unwieldy...
