VMPRO backup does not recognize mapped drives or unc paths.
Any ideas how to back it up to a shared network drive?

Hmm.. not sure if this is what your looking for, but use SSHFS to mount directories as drives on my client machine.
I install sshfs on the client, and run the appropriate command to mount the remote director as a volume on, in my case, my MacBook Pro.

From here, I can use whatever backup routines are on my Mac to back up files on the IP Office Application server.
