I have a 5500 switch that has 5 gigabit interfaces on it. Everytime I try and put one of the interfaces onto a different VLAN, it looks like everything happened fine, but then doing a "show port" shows that nothing has changed...Any ideas?

You can not set up VLANs on a cat 5000 until you have the VTP domain configured or you set VTP to transparent. Have you done this part yet? Keep in mind the default for VTP is server mode so you would need to change it if you want transparent.
