Using Vista to extract files from a windows 2008 backup?

I was running windows workstation 2008, but I didn't care for it, so I went back to vista. I used 2008 to do a full backup of what was the C: at the time, but the vista backup utility won't restore it, and it really doesn't even give much in the way of options. I can put server 2008 on a laptop and use that to extract it if I need to, but I hope there is a better way.

The 2008 backup utility seems to have lots of options, whereas the vista sort of guides you while blocking off some options for no apparent reason, so if I could get the actual 2008 backup utility onto vista, that would be great, because the vista one won't even let me do the backup the way I want. My C: is a 750gig, partitioned into two halves, an old D: with my original vista on it, and the 2nd half of the 750 is my E: with the backups on it. These are all x64 in case it matters.
