Using connected interface in a ip route statement?

I noticed some people like to use the connected interface in a route statement as opposed to the address of the next hop router i.e.:
ip route 1.1.1.0 255.255.255.0 Serial0/0

How does this even work? To whom is the packet addressed? How does it know how to reach the next hop router?
