Using an Existing Mail Server as a Relay

I have an environment that has Eudora Mail server running on a Mac. We want to deploy Exchange Server but slowly migrate users over from Eudora. Since there is no connector between Eudora and Exchange, is there a way to have Eudora act as relay. For example:

sam@mycompany.com --> INTERNET --> Eudora Mail (forward to Exchange) --> Exchange (sam@mycompany.com)

This way all email will have the same addresses and once everyone has been transferred to Exchange, Eudora can be removed from the network.
