User Specific Views and Datasheet Views

I am fairly news to Sharepoint Services and I'm trying to customise a site. I was hoping someone could help me with the following questions:

1. If I create a datasheet view, for some reason the Edit and/or Title fields that allow you to edit the data won't show in the view. They are there but just don't appear. Does anyone know why this is, or a way to make them appear?

2. Is it possible to control access to specific fields within a list?

3. If not, is it possible to create user specific views?

3. yes, using user specific filters when creating a view
