User Cannot Access Email w/ Outlook 2007

Background info: WinXP Pro SP2, Office 2007, Microsoft Exchange on Windows Server 2003.

One of our users can't access their email account through Outlook 2007 anymore (was working for 1 - 2 years before this week). When they sign in and open Outlook it asks them to create a new profile and starts trying to connect to the exchange server to retrieve their settings. This is followed by a message telling us that the server is unavailable and it can't retrieve the settings. We then tried to set up the account manually with no luck.

I've checked out this thread and it sounds similar to our situation in terms of connection to the server ->
Other things I have tried:

-Signing in with a different user account on the "bad" computer.
SUCCESSFULLY created new outlook account

-Signing in with the "bad" user account on a good computer
SUCCESSFULLY created new outlook account

Things to note: This computer was updated to SP3 but then removed and only security patches applied. This User/Computer combination has had similar issues with obtaining GPO settings from the server.

It seems like a local problem with this one user's settings on this one computer but I would not know where to begin looking for a solution. Please, let me know if you have any thoughts or ideas.

Check both their DNS and WINS settings on the computer. Delete their Outlook profile again recreate in cached mode manually.

If that fails, try dropping the computer out of the domain, delete their Windows profile, put it back onto domain and set up profile again.
 
Intermittent problems are hard to chase down... Everything works fine now... the only thing I did different was to create the account directly from the control panel instead of through outlook. We opened outlook and everything went back to normal. I think deleting the users profile probably would eliminate the problem totally but is a bit invasive in this instance.

Earlier, I had checked DNS and WINS setting earlier when it was not working and everything was OK. I went to check the email account setting via Control Panel and there was no account profile listed as expected... so I tried once more to create an account and it worked this time.

Oh well... the issue may arise again so if anyone has an idea what could cause this intermittent issue let me know.

Update:

This problem came back about a month ago... When the user signs in, their email works fine. When they close outlook and then reopen, it asks to create a new account.

The work around for this has been the user leaves outlook open all day and if they close it, they restart their computer to get it back...

Any thoughts or ideas?
