Should I use Unicode Compression? Will it slow down a client/ server database (both ends on Access)?

I would suggest it would speed it up. You reduce storage (and therefore i/o) at the expense of a bit of cpu on your client. Current pcs are phenomenally powerful so extra cpu is trivial.
