Upgrade Beta to Relase 2K

Is there any way to update or upgrade windows 2K professional evaluation copy to a licenced copy of windows professional without loosing anything?
I have a user that has been using the 30 day evaluation for a year, and it is telling us our evaluation time has expired. I don't want to loose anything on the machine.
Does anyone have any Ideas?
