I am going to try installing Ubuntu and want to setup raid 1.
I have done it with debian but notice most walkthroughs partition im two partitions instead of 3 (one for swap). Is this the way to go or the 3 partritions one for OS one for swap and one for Data (which will be used by a Plesk install)?

The partitioning and raid 1 are really separate entities, though your decisions will impact both simultaneously. In order to run effectively, you should have a swap partition. A lot of people like to use separate root and home partitions as this is supposed to let you upgrade your system more easily but, personally, I have found it gets in the way.

When I setup my newest server, I configured the two drives as a raid 1 and duplicated the partitioning on each drive, using two partitions: one of the system and a swap space. Both drives are also bootable and I can bring the system up on either drive without needing to worry about installing or configuring grub during a crisis.

My recommendation would be to create the raid array as the raid 1 and then partition the system like you normally would if you were doing a single disk install.
