Two DHCP Servers sharing Cable Modem

What happens if I connect two separate networks (separate switches)to a single cable modem router? Both are Exchange servers, one is Windows 2000 Server and the other is SBS 2003. Different Domain Names.
 
I have an existing LAN running Windows Server 2000. I'm switching over to a new install on a new machine of SBS 2003. I want to have the existing LAN working as long as possible before switching over to the new SBS 2003. I will take the existing server off line after I migrate mailboxes etc to the SBS 2003 but can I switch back to the Win Server 2000 if I experience problems with the SBS 2003?

The general question is - what is the most strategic way to make this transition happen that minimizes down time and retains flexibility to switch back in case of problems?
