Tray Selection - hp 4050 T

I have a 4050 set at the default settings which works fine for right now.
I've tried to read about tray selection but im getting confused.
How do I set the printer so that if someone puts special paper (ie letter head, labels) in the manual feed the person has to select the manual feeder to print to it.
Right now if I add something to the manual tray it is sucked up no matter what. So someone elses stuff is printed on my letterhead. Im assuming this has to do with the "Tray 1 = first" setting. Do I set it on the printer? The print server (w2k3)?
Also when I look at tray selection on the print server it only gives me the option of trays 1 and 2 yet the printer has 3 tray. The driver is the 4050 series. How can I fix that aswell?

Try tray 1=cassette setting(on the printer). Sometimes tray nomenclature is confusing.

You can also have the end-user select that when they go to print. All they have to do is adjust it in the driver.
