Track Object usage

I am trying to track how often few tables are being used in a database and would like to track the login name and host name for that process. I know how to track this down using Profiler but in our prod environment we can't use it due to app timeouts. The environment is SQL 2005. Any help is greatly appreciated.

SQL Profiler would be the correct tool to use.

You can setup a trace using T/SQL to export to a file, then import that file into a table and query it.
