Trace for Damask Patterns

Need to create outlines on images for Damask stencils, etc. How can I do this and create a crisp and accurate trace rather then blobs. Trying to trace jpg's ripped from Net. Perhaps scanning crisp images would be better?

...how are you trying to trace at the moment?

...the pen tool and the pathfinder functions in combination with shapes would be the usual methods...
