Tomcat System Time

I am trying to get Tomcat to return a different time to system time.
I have set my timezone to EST in my profile but tomcat still picks up the local time GMT, I own tomcat so it should pick up my time.
Does anyone have any suggestions on how to change this.
Tomcat is running on Solaris.
