Tomcat logs off by 5 hours after server 2003 to 2008 upgrade

We have a windows server running a few apps on tomcat, that was recently upgraded from Server 2003 to 2008. After that upgrade, the tomcat logs all show the time as 5 hours in the future. The server is also showing the wrong date (1 day behind) in the application. The windows server time and time zone are correct. I've found some information out there about changing the time zone in tomcat, but so far I have been unsuccessful. This is one of the few apps we have that runs on tomcat, so I'm not very familiar with it at all. Any help would be greatly appreciated!
 
Thanks for the response, but this is actually fixed.

The fix was to add the below line to the Java Options:

-Duser.timezone=US/Central
