Timestamp error on emails

We've recently upgraded to ES2003 and Outlook 2003. Since doing so nearly all our email are received timestamped 8 hours ahead of time. The send log records the correct time.

We've been through all the settings and can't find anything obvious. Has anyone else come across this problem and what causes it?
