Are pads better than the paste?
If so, what thickness is best?

Either shape/form, any brand in particular I should favor?

For CPU or GPU where the temperature is the hottest, I always go for paste, Arctic Silver 5. I have also used Céramique 2 with great results, also from Arctic Silver. As for how thick, their website has great instructions. The instructions on their website work for other pastes as well, Coolermaster and thermaltake make ok paste, but Arctic Silver has been the most consistent product I have used.
