can anyone help me figure out how to expand the fill in text without making the stoke thicker. I want to create a thick version of a font, like bubble letters for example, and not enlarging the font , just the fill.

...appearance palette, flyout menu > add new fill or stroke is the best way to create special text...

...choose window > appearance to get there, one of the most powerful features of illustrator is controlled using this palette...

...you can then shuffle fills and strokes one on top the other to produce differing effects (from the effects menu, which are editable effects), apply filters to certain parts etc, different colors, gradients, different strokes...

...you will probably want to use the effect > path > offset path onto a new fill added via the appearance palette...

...quite often you will want fills on top of strokes, do that by dragging the fill into a different order...

...double click an effect, fill or stroke to adjust in the relevant palette or dialog box...

...you can store your styles in the 'graphics style' palette by dragging a custom object to it...

...then apply to another object or text...

...if you then adjust the effect on the artboard, drag it back over the existing/old style in the 'graphics style' palette with the 'alt/option' key and it will change all objects on the fly that used the old style...
