How does one go about creating text on a circular path (that much I can do) with the text inverted so that the bottom of the letters faces outward from the circle (as opposed to the default, which is inward)?

after you get the top part done, copy and paste the text path in front of itself. You should see a blue bar intersecting your type path about as tall as the text itself. Just grab that bar and move it down to the bottom of the circle. This bar allows you to change both the position on the path as well as the side of the path it is on. Once the text is on the right part of the path you will need to give it a negative baseline shift (its a field in the lower left part of the character palette with the options shown)
