Text Fx...How'd they do that?

Can someone please help me understand the method I would use to acheive the text effect in this example "Black & White"

especially how they split the ampersand sign with white on one side and black on the other.

Draw the two bkgd boxes. Type your copy in a box on top of the bkgd boxes.
Go to Pathfinder palette and select "Exclude overlapping shape areas"
