Hello there,

This is probably a really stupid question.... but I have opened a quark document at work and the text is as a percentage rather that a point size. Firstly, why is this and how do I go about doing it myself. Does that make sense?!!!

I never heard of font size being a percentage.
If so what is it a percentage of? If you highlight text and it says 24 pt. that means 24 point, and whatever text is highlighted you can choose whatever point size you want.
If the leading value is set at auto, then the default value is probably 20% above the font size which you can change in your Quark preferences.
