The book I keep returning to is the Windows 2000 Server Bible.

But I learned Terminal Services by using NT4 Terminal Server Edition - and buying the Microsoft Technical Reference. It comes with a 120-day trial version, so maybe this would be a good way for you to start.

It would save a lot of money as well!

To learn about profiles, there is a white paper on Microsoft's site which is over 100 pages long and contains just about everything you need to know.

Here's another document on Windows 2000 Terminal Services

...and try these for a few tips

...and finally, have a read of my FAQ's in the Citrix forum. I cannot stress strongly enough the added value that a Test environment brings to a Citrix/Terminal Server solution.

Good Luck!
