Terminal Services Lockdown

i have several users connecting to a terminal server to run an appliclication, how would i lock down the user environment so the user has a short start menu and no desktop icons etc etc

Setup group policy. (go into AD users and computers, right click the OU that holds your users, properties, group policy) You can then create a new GP, or edit an existing one.
 
What about if youre running terminal services off a win2k server within an NT4 domain? (no AD Users and Computers)

Then change the Local Policy on the server
