TCP Intercept

I have a question on the "normal" ammount of TCP Half open connections that should be allowed per server.. The reason I ask this is that I am implimenting "TCP intercept" for a large number of servers aprox 300-800 servers and I need to set a max-incomplete high and also one-minuit high .. If anyone has applied these types of list please let me know if there are any other issues regarding implamenting TCP-Intercepts :)
