I have been tasked with correctly grounding a 200' shielded cat5e that is being used soley for the purpose of injecting power into a WiFi hop (skypilot). I have been told to ground only the foil shield on one end. Both ends. And I've been told that grounding the shield will not ground the pairs themselves. Any experience with this issue???

If the cable is not extended between buildings, only ground one end to the grounding busbar in your data center or equivalent.

If the cable goes between buildings then you will need surge protection on both ends and the shield grounded/bonded on both ends also. You can read NEC article 800 and related sections of article 250 for more info.
