Strokes withing ext

...the example provided are applied to paths, you need three strokes, layered one on top of the other in the appearance palette...

...the bottom stroke is the thickest, middle one is the lightest color and less stroke weight, the top one is the same color as the bottom stroke and with less stroke weight than the middle stroke...

...the flyout menu (top right of palette) allows you to "add new stroke", or you highlight an existing stroke in the appearance palette and press the "duplicate selected item" button, bottom of palette, next to the trash icon...

...with an item highlighted in the appearance palette, you can change the attributes of that item as needed, you just need the correct stacking order...

...you can then drag the item from the pasteboard that has your custom appearance to the "graphic styles" palette, for use on other objects...

...keep in mind that there are also additional steps needed to get some of those examples you have provided, there is more to those examples than just an appearance style applied, but layered strokes are pretty much the basis...
