Is there any source which explains what all these existing store procedure does.

The zDP stored procedures are Dexterity created stored procedures which improve performance by having pre-compile queries which can be used when Dexterity accesses tables using the indexes defined in the dictionary.

All the other stored procedures are used for SQL optimisation. That is... taking the original Dexterity code and converting it to SQL where it would make the task faster.
