stopping backups on a storage node to reboot.

I have been told that I HAVE TO reboot my storage node, for the patches that MS has released. Not an issue.

Problem: The storage node is writing, and has been for about a week. What would be the best way to move the backups off that storage node (they're hot database backups so failing is not an option). is there a way to force the drives into service mode so that the backup will "Fail over" to another storage node?

If you have the "service mode" option (NW 7.0+) you can do this at any time. However, this means that "new" jobs will not be assigned to these devices - pending ones are still executed as assigned.
