Stoopid newbie admin question - internal stats

OK, we're running mailsweeper that gives us stats and logs of external mail activity - what I was wondering (or have been asked for!) is there any way to monitor, log or produce stats on internal mail usage within company?

Just something simple, so an outline of who does what etc is what I think we're looking for.
