I have a large Access 2003 DB with many records of people's names and addresses. When I try a "Find and Replace", the default settings are "Donor ID" (my primary key) and "Whole Field". Is there any way to change these defaults so that "Find and Replace" will open to eg. "Last Name" and "Any Part of Field?

for setting the default to "Any Part" do this

Select Tools-Options-Edit/Find from the ACCESS menubar and change Default Find / Replace Behavior to General from Fast Search

As for the default field, if the Find option is via a command button you have on the form, you can set focus to the field you want to search before you start the Find, if you are talking about using the Find option from the normal menus, then I'm not aware of how to set the default field for them.
