Hi! I have an old Compaq Proliant 5000 server. There are 5 scsi disks. All the disks are emty. How should I start to configure this box and which tools are required?

Either downloading or ordering the correct Smart Start CD is the best way to start. If memory serves correctly, any 5.x version should work.
