Stand-Alone server

We are in a multi-platform network. We don't use Active Directory. I would like to add a windows server for file sharing and printing. Our network has about 75 users.
Can this be done? And if so what version of server would you recommend?

Is there a reason that you're not using Active Directory? If you have 75 users, I think that you're well into the size that having AD makes sense for most use cases. It will go a long way towards centralizing management and security...

And yes, Windows Server 2008 R2 would be my choice. Especially since you have no concerns about integrating it within an existing AD environment, I would recommend jumping right into a Windows 2008 R2 domain structure.
