SQL Server Login User Mapping not working

On SQL Server 2008, under Security, I have a user with "User Mapping" set up for specific databases. This user is set up just like the others, but for some reason can only see a couple of the databases when they try to create a ODBC System DSN. When I change the databases he can view in "User Mapping", I can save the changes fine, but when the user logs on he still can not see those databases when creating a DSN.

I thought I might try deleting the user from SQL Server and re-adding him, but every time I delete the user I can't recreate him because it says he's still there, and suddenly his login it back.

This is been ongoing for a couple days now and I give up, anyone have any suggestions?
