Currently we are running OneWorld 7332 on NT 4.0 and SQL 7.0. We are planning to upgrade to Xe in the next couple of months. Should I also upgrade to SQL 2000? What is your feedback on SQL 2000 and JDE Xe.

SQL Server 2000 is suppost to take better advantage of RAM, and to improve Performance, the best combination I would say is Windows 2000 Advanced Server & SQL Server 2000.

But You can still SQL Server 7.0, I have used them both OneWorld running SQL 7 & 2000, and I like more 2000.
