speech - SDK5.1 - Simplified chinese

Hi,
As i downloaded speech SDK5.1 from microsoft site and also dowloaded simplified chinese supporting files also. i dont know how to set the default language as simplifed chinese. please anyone help me how to set the other language like simplified chinese & japnese..
